8 sausages (use a meaty variety) (or vegan)
1 red pepper, deseeded and cut into chunks, or 2 to 3 roasted red peppers (from a jar)
1 red onion, peeled and cut into 8 wedges
3 floury potatoes, peeled & cut into 2 cm cubes
1-2 tbsp @belazu_co rose harissa (depending on how hot you want it)
1 can chopped tomatoes
Handful of black olives
1/2 tsp dried oregano
👩🏼🍳Using a large oven-proof saucepan, fry the sausages (in 1 tbsp oil) over a moderate heat until they release some fat and start to take on colour. Add the potatoes and fry for another five minutes. Drain away any excess fat (mine didn’t release much).
👩🏼🍳Add the rest of the ingredients, stir gently and bake at 200 C for about 40 mins, turning the sausages once, until everything is bubbling and the potatoes are cooked and sausages have browned. (Note: try to avoid overloading the dish, keep it one even layer.)
👩🏼🍳Sprinkle with chopped parsley and serve.
