Roast chicken thighs with Belazu Apricot harissa, Jersey royal potatoes, and red onions 🍑🌶️

Couldn’t be quicker or easier and the family really enjoyed it. ⁠I’m working on different ways to use this harissa, from salads, to ‘nduja pasta sauce, to this simple roasted chicken dish 🍑🌶️⁠ Rose harissa would also work very well.

Just add a couple of tablespoons of apricot harissa to a bowl with 8 chicken thighs (ideally higher welfare), a bag of baby Jersey royals (cut in half if they are large) add 2 tbsp of olive oil, 1 tsp of flaked sea salt and a good grind of black pepper, and mix thoroughly. ⁠

Throw in a couple of red onions (peeled and cut into 6 or 8 segments), some black olives, and carefully mix. ⁠

Turn into an ovenproof dish and position the chicken skin side up. ⁠

Roast for 45 mins at 190 C fan, basting occasionally.

Sprinkle with parsley. Done 👊⁠

Delicious served with steamed Tenderstem broccoli or a green salad
