This salad may not look very different from your usual version, but the flavour and texture are spectacular. Who can resist the combination of fresh herbs, crunchy lettuce and the sweet sour tang of extra virgin olive oil, lemon juice and pomegranate molasses. I ate it every day in Turkey, immediately after watching the chefs prepare it.
Salad ingredients
1/4 iceberg lettuce
A large handful of herbs, such as parsley, basil, mint, dill (no need to strip the leaves, just chop until most leaves have been incorporated)
A handful of rocket and/or lambs lettuce
1 large peeled red tomato and/or a handful of cherry tomatoes (as you wish)
1/4 cucumber
1/2 red pepper
1/4 red onion
Dressing ingredients
4 tbsp olive oil
2 tbsp pomegranate molasses
1/2 lemon, squeezed
Pinch of Maldon sea salt
Pinch of pul biber (Turkish dried chillies)
