Roast cod loin with tomatoes, capers & olives

As simple as a…⁠

Handful of cherry tomatoes, halved⁠
Sprinkle of capers⁠
Smattering of black olives⁠
1 cod loin (this is a #choosethebluefish MSC Icelandic Cod Loin)💙⁠
Drizzle of olive oil⁠
Tablespoon of pine nuts
Grind of black pepper and pinch of sea salt⁠
Sprinkle of Aleppo pepper⁠

Roast for 15 mins at 200 C/180 fan, sprinkle with fresh basil, and eat with crusty bread.⁠

You can also add charred artichokes and roasted peppers for variety.
